The life of the renowned chef Jonathan L. Perez has been very active.
In recent months, he has received awards, opened new projects, and developed new ideas.
However, his humility remains the same.
“It’s a team effort, if you have a great group, you’ll be fine,” he says.
It’s not common to meet a figure who is making a significant change within the culinary world.
“You seem like an Anthony Bourdain,” I say.
He laughs.
His ego doesn’t exist; his interest in the community and his projects go beyond. He recently joined a group of partners to found Birote, an express food concept that reflects his personality.
Exquisite, complex, and presented in the simplest way to the community, in a Birote.
“We try to present the best experience to people, and even if it’s a Birote, they can enjoy it,” he adds.
How many thousands of ideas fly through his head to recreate the simplest dishes?
“If you have all the ingredients, it’s the simplest thing. Remember our previous conversation, I learned from my mother, I’ve added the rest. With food, we are changing history, leaving our mark,” he adds.
For him, the connection with the community is vital.
“It guarantees success, the important thing is to share,” he adds.
Jonathan still has a goal that lies in the future.
“I want to go to Guatemala, explore all its flavors, recreate that culture, my culture,” he says.
In the meantime, his interest in the community, his charitable activities, the way he shares his knowledge with his team and his customers satisfy him every day.
You can hear his smile, his humility, the way he is transforming the cuisine of Los Angeles, and that mind that flies and flies.
We don’t know what will happen tomorrow and the dreams he has, because nothing is certain. Someday he will earn his Michelin star, even if that is not his goal.
