LA HISTORIA DE EL PAN DULCE
The legend spread in Europe says that sweet bread was born in the court of Duke Ludovico Sforza of Milan in a lavish Christmas Eve celebration when the Lord decided to celebrate Christmas with a great dinner, with innumerable delicacies, as was customary in his court with the presence of noble guests from neighboring cities.
His Master Chef forgot to take the dessert out of the oven on time and lost the preparation. But fortunately a kitchen assistant named Antonio (Toni), driven by the melancholy he felt for his distant home in Lombardy, decided to prepare, simultaneously with the Lords’ dishes, a special bread to later take home, a bread like the ones his mother made on Christmas Eve. A sweet bread for which he could not have all the necessary ingredients, so he had to content himself with the older cook’s leftovers.
Faced with the cook’s desperation, Toni suggested presenting his “sweet bread” as dessert. At first glance, the experienced cook noticed the elegance of its cylindrical shape and was convinced that its delicious perfume was the advertisement of an exquisite flavor.
Toni personally divided the curious delicacy into slices and arranged them artfully on silver trays. Great was the surprise of the Duke and his guests when they saw the exotic food, decorated with candied fruits and giving off a flattering perfume. They instinctively began to applaud; an instant later, its delicate flavor had conquered their palates. Total success!
The duke ordered the author of that marvelous work to be summoned to his presence. To everyone’s amazement, the famous teacher did not appear, but rather a shy kitchen assistant. – What’s your name? – My name is Toni…- Very good! What is the name of the delicacy you have prepared for us? – It has no name, Lord… – So this will now be the Pane-di-Toni (Toni’s bread), which over the centuries is known as Pannettone.
Although the story is very nice, the truth is that since before Christmas the Romans prepared a special bread containing various ingredients, as many as they could, they took it to the fire and then shared it together as an omen and wish that abundance would return with the sun.
Wheat means the gift of life and represents immortality, that is why at Christmas we always share it, whether it is artisanal in Milan or industrial, it is present on the table of the rich or the poor. Wheat that represents the world (Matthew 13:38), the world through which God sent his beloved Son to redeem and save it.
